Tips for the Best Roasted Potatoes
- Dry the potatoes thoroughly after washing to help them crisp.
- Don’t overcrowd the baking sheet—leave space between the potatoes so they roast instead of steam.
- Roasting them cut-side down creates an extra-crispy, caramelized surface.
- Fresh herbs added after roasting keep their flavor bright and vibrant.
Serving Ideas: These potatoes are delicious alongside grilled steak, roast chicken, pan-seared salmon, pork chops, burgers, or even topped with a fried egg for a hearty breakfast.
