Ingredients
For the Filling
- 1½ pounds (680 g) lean ground beef (or ground turkey)
- 1 tablespoon olive oil (if needed)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 (1-ounce) packet taco seasoning (or 2 tablespoons homemade taco seasoning)
- 1 (10-ounce) can diced tomatoes with green chilies (Rotel), undrained
- 1 cup salsa (mild, medium, or hot)
- 1 (15-ounce) can black beans, drained and rinsed
- 1 cup corn kernels (fresh, frozen, or canned)
- 4 ounces cream cheese, softened
- ¼ cup chopped fresh cilantro (optional)
For the Layers
- 8 medium flour tortillas (or corn tortillas for a gluten-free option)
- 3 cups shredded Mexican cheese blend
- 1 cup shredded cheddar cheese

Instructions
1. Prepare the Filling
- Preheat oven to 375°F (190°C).
- Lightly grease a 9×13-inch baking dish.
- In a large skillet, cook the ground beef and onion over medium-high heat until the meat is browned.
- Drain excess fat, then stir in the garlic and cook for 30 seconds.
- Add the taco seasoning, diced tomatoes with green chilies, salsa, black beans, and corn.
- Simmer for 5–7 minutes.
- Stir in the cream cheese until melted and smooth.
- Remove from the heat and stir in cilantro, if using.
2. Assemble the Lasagna
- Place 2 tortillas in the bottom of the baking dish, overlapping slightly.
- Spread one-third of the meat mixture over the tortillas.
- Sprinkle with about 1⅓ cups of the cheese mixture.
- Repeat the layers two more times.
- Finish with the remaining tortillas and top with the remaining cheese.
3. Bake
- Cover loosely with foil and bake for 25 minutes.
- Remove the foil and bake another 10–15 minutes, until the cheese is melted, bubbly, and lightly golden.
- Let rest for 10 minutes before slicing.
