Ingredients
For the Pork Chops
- 4 bone-in or boneless pork chops (about 1 inch thick)
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 tablespoon olive oil (optional, for searing)
For the Glaze
- ½ cup chicken broth
- ¼ cup low-sodium soy sauce
- ¼ cup honey
- ¼ cup brown sugar
- 2 tablespoons ketchup
- 1 tablespoon Dijon mustard
- 2 teaspoons Worcestershire sauce
- 3 cloves garlic, minced
- 1 teaspoon smoked paprika
- ½ teaspoon dried thyme
To Thicken the Sauce
- 2 tablespoons cornstarch
- 2 tablespoons cold water

Instructions
1. Season the Pork
Mix the salt, pepper, garlic powder, and onion powder. Rub the seasoning evenly over both sides of the pork chops.
2. Optional Sear
Heat olive oil in a skillet over medium-high heat. Sear the pork chops for 2 minutes per side until lightly browned. This step adds extra flavor but can be skipped.
3. Prepare the Glaze
Whisk together:
- Chicken broth
- Soy sauce
- Honey
- Brown sugar
- Ketchup
- Dijon mustard
- Worcestershire sauce
- Garlic
- Smoked paprika
- Thyme
4. Slow Cook
- Place pork chops in the slow cooker.
- Pour the glaze over the top.
- Cover and cook:
- Low: 5–6 hours
- High: 2½–3 hours
Cook until the pork reaches an internal temperature of 145°F (63°C).
5. Thicken the Sauce
- Remove the pork chops and keep warm.
- Whisk together cornstarch and cold water.
- Stir into the cooking liquid.
- Cover and cook on High for 10–15 minutes until thickened.
6. Serve
Return the pork chops to the slow cooker and spoon the thick glaze over each chop before serving.
