For the Grilled Chicken

- ½ tsp onion powder
- ½ tsp salt

For the Spinach
- 8 cups fresh baby spinach
- 1 tbsp olive oil
- 2 cloves garlic, minced
- Pinch of salt
- Pinch of black pepper
- 1 tsp lemon juice
Roasted Sweet Potatoes
- 2 medium sweet potatoes, cubed
- 1 tbsp olive oil
- ½ tsp paprika
- ½ tsp garlic powder
- Salt and pepper, to taste
Fresh Vegetables
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1 avocado, sliced
- Lemon wedges
Optional Toppings
- Crumbled feta cheese
- Pumpkin seeds
- Fresh parsley
- Chili flakes
Instructions
1. Marinate the Chicken
- In a bowl, combine:
- Olive oil
- Lemon juice
- Garlic
- Smoked paprika
- Italian seasoning
- Onion powder
- Salt and pepper
- Coat the chicken evenly.
- Marinate for 20–30 minutes (or up to 8 hours in the refrigerator).
2. Roast the Sweet Potatoes
- Preheat the oven to 425°F (220°C).
- Toss the sweet potatoes with olive oil, paprika, garlic powder, salt, and pepper.
- Spread on a baking sheet in a single layer.
- Roast for 20–25 minutes, turning halfway through, until tender and lightly browned.
3. Grill the Chicken
- Heat a grill or grill pan over medium-high heat.
- Grill the chicken for 6–7 minutes per side, or until the internal temperature reaches 165°F (74°C).
- Let the chicken rest for 5 minutes, then slice.
4. Sauté the Spinach
- Heat olive oil in a skillet over medium heat.
- Add garlic and cook for 30 seconds.
- Add spinach in batches, stirring until just wilted (about 2–3 minutes).
- Season with salt, pepper, and lemon juice.
5. Assemble the Fitness Plate
Divide among four plates:
- Sliced grilled chicken
- Sautéed spinach
- Roasted sweet potatoes
- Cherry tomatoes
- Cucumber slices
- Avocado
Garnish with feta, pumpkin seeds, parsley, or chili flakes if desired. Serve with lemon wedges for squeezing over the top.
