- 6 cups chicken broth
- 1 cup whole milk or half-and-half
- 1½ pounds (680 g) cooked chicken, shredded or diced (rotisserie chicken works well)
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- ½ teaspoon dried rosemary
- 1 bay leaf
- 1 teaspoon salt (or to taste)
- ½ teaspoon black pepper
- 1 cup frozen peas
- 2 tablespoons chopped fresh parsley
For the Dumplings
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- ½ teaspoon garlic powder (optional)
- ¼ teaspoon black pepper
- 2 tablespoons cold unsalted butter, melted
- 1 cup whole milk
- 1 tablespoon chopped fresh parsley (optional)
Instructions
1. Cook the Vegetables
- Melt the butter with the olive oil in a large Dutch oven or soup pot over medium heat.
- Add the onion, carrots, and celery.
- Cook for 6–8 minutes, stirring occasionally, until softened.
- Stir in the garlic and cook for 30 seconds.
2. Make the Broth
- Sprinkle the flour over the vegetables and cook for 1–2 minutes, stirring constantly.
- Gradually whisk in the chicken broth until smooth.
- Stir in the milk, thyme, parsley, rosemary, bay leaf, salt, and pepper.
- Bring to a gentle simmer.
3. Add the Chicken
- Stir in the cooked chicken.
- Simmer gently for 10 minutes.
- Add the frozen peas.
4. Prepare the Dumplings
In a medium bowl:
- Whisk together the flour, baking powder, salt, garlic powder, and pepper.
- Stir in the melted butter and milk until just combined. Do not overmix.
The dough should be thick and sticky.
5. Cook the Dumplings
- Drop heaping tablespoons of dough onto the gently simmering stew.
- Cover tightly with a lid.
- Reduce heat to low and cook for 15–18 minutes.
Important: Do not lift the lid while the dumplings are cooking. The trapped steam is what makes them light and fluffy.
6. Finish
- Remove the bay leaf.
- Stir in the fresh parsley.
- Taste and adjust seasoning if needed.
Serve hot.
