Ingredients
- 1 medium cucumber, peeled and chopped
- 1 cup pineapple chunks (fresh or frozen)
- Β½ cup coconut water
- ΒΌ cup fresh lime juice (about 2 limes)
- 8β10 fresh mint leaves
- 1β2 tablespoons honey or agave syrup (optional)
- 1 cup ice cubes
- Β½ cup sparkling water (optional, for fizz)
Garnish
- Cucumber ribbons or slices
- Pineapple wedge
- Fresh mint sprig
- Lime wheel
Instructions
- Add the cucumber, pineapple, coconut water, lime juice, mint, honey (if using), and ice to a blender.
- Blend until completely smooth.
- For a smoother drink, strain through a fine-mesh sieve (optional).
- Divide between two chilled glasses.
- Top each glass with sparkling water if you prefer a fizzy cooler.
- Garnish with cucumber slices, pineapple, mint, and a lime wheel. Serve immediately. The cucumber and pineapple create a refreshing tropical flavor, while mint and lime add brightness.
