No-Bake Peanut Butter Balls

Ingredients:

Instructions
1. Mix the Wet Ingredients

2. Add the Dry Ingredients
Add the oats, flaxseed (or almond flour), salt, and chocolate chips. Fold everything together with a spatula or wooden spoon until a thick, cohesive “dough” forms. It should hold together when pinched. If it’s too sticky to roll, add another tablespoon of flaxseed or oats. If too dry, add a small splash of milk or extra peanut butter.
3. Roll Into Balls
Scoop about 1 tablespoon of the mixture and roll between your palms into a smooth ball. For consistency, use a small cookie scoop. If the mixture sticks to your hands, dampen them slightly with water or a tiny bit of coconut oil.
4. Coat (Optional)
For a more finished look, roll each ball in crushed peanuts, shredded coconut, or cocoa powder right after shaping.
5. Chill to Set
Place the balls on a parchment-lined plate or baking sheet. Refrigerate for at least 30 minutes to firm up. They’ll become denser and less sticky as they chill.
6. Store
Transfer to an airtight container. Store in the fridge for up to 2 weeks or freeze for up to 3 months. They’re great straight from the freezer—chewy and fudge-like.
