Mie Pedas (Indonesian Spicy Noodles) is a popular Indonesian noodle dish known for its bold, spicy, savory, and slightly sweet flavor. It’s quick to make and can be customized with your favorite protein and vegetables.
Ingredients (2 servings)
For the noodles
- 7 oz (200 g) fresh egg noodles or instant noodles (without seasoning packets)
- 1 tbsp vegetable oil
Protein & Vegetables
- 5 oz (150 g) chicken, beef, shrimp, or tofu, thinly sliced
- 2 cloves garlic, minced
- 1 small shallot, thinly sliced
- 1 cup cabbage, shredded
- ½ cup carrots, julienned
- 2 green onions, sliced
Spicy Sauce
- 2–5 red chilies, finely chopped (adjust to taste)
- 1 tbsp sambal oelek or sambal chili paste
- 1 tbsp sweet soy sauce (kecap manis)
- 1 tbsp soy sauce
- 1 tsp oyster sauce
- ½ tsp sugar
- ¼ tsp white pepper
Optional Toppings
- Fried egg
- Crispy fried shallots
- Lime wedges
- Fresh cilantro
- Sliced red chilies
Instructions
- Cook the noodles according to package directions until just tender. Drain and set aside.
- Heat the oil in a large skillet or wok over medium-high heat.
- Sauté the garlic and shallot for about 1 minute until fragrant.
- Add the chicken (or other protein) and cook until done.
- Stir in the cabbage and carrots. Cook for 2–3 minutes until slightly tender but still crisp.
- Add the chopped chilies, sambal, sweet soy sauce, soy sauce, oyster sauce, sugar, and white pepper. Stir well.
- Add the cooked noodles and toss until evenly coated with the sauce.
- Stir in the green onions and cook for another minute.
- Serve immediately with a fried egg, fried shallots, and a squeeze of lime if desired.
Tips
- For extra heat, add bird’s eye chilies.
- Kecap manis gives the noodles their signature sweet-savory flavor—it’s worth using if you can find it.
- Add mushrooms, bok choy, bean sprouts, or bell peppers for more vegetables.
- Pair with iced tea or cucumber slices to balance the spiciness.
