Ingredients
For the Soup
- 2 tablespoons olive oil
- 1½ pounds (680 g) beef stew meat, cut into 1-inch cubes
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- 1 medium onion, diced
- 3 carrots, sliced
- 3 celery stalks, sliced
- 4 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 bay leaf
- 8 cups low-sodium beef broth
- 1 (14.5-ounce) can diced tomatoes, undrained (optional)
- ¾ cup pearl barley, rinsed
- 1 cup sliced mushrooms (optional)
- 1 cup frozen peas
- 2 tablespoons chopped fresh parsley
Instructions
1. Brown the Beef
- Season the beef with salt and pepper.
- Heat the olive oil in a large Dutch oven or soup pot over medium-high heat.
- Brown the beef in batches for 5–7 minutes per batch. Remove and set aside.
2. Sauté the Vegetables
- Add the onion, carrots, and celery to the pot.
- Cook for about 5 minutes until softened.
- Stir in the garlic and cook for 1 minute.
- Add the tomato paste and cook for another minute.
3. Build the Soup
- Return the beef to the pot.
- Stir in the Worcestershire sauce, thyme, oregano, and bay leaf.
- Pour in the beef broth and diced tomatoes (if using).
- Bring to a boil.
4. Simmer
- Reduce heat to low.
- Cover and simmer for 60 minutes.
5. Add the Barley
- Stir in the pearl barley and mushrooms (if using).
- Continue simmering for 40–45 minutes, or until the barley is tender and the beef is fork-tender.
6. Finish
- Stir in the frozen peas during the last 5 minutes of cooking.
- Remove the bay leaf.
- Stir in the fresh parsley.
- Taste and adjust seasoning with additional salt and pepper if needed.
Slow Cooker Version
- Brown the beef and sauté the onions and garlic (recommended for best flavor).
- Transfer everything except the barley, peas, and parsley to the slow cooker.
- Cook on Low for 7–8 hours or High for 4–5 hours.
- Stir in the barley during the last 60–90 minutes of cooking.
- Add the peas during the final 10 minutes and stir in the parsley before serving.
Instant Pot Version
- Use Sauté mode to brown the beef and cook the vegetables.
- Add the remaining ingredients except the peas and parsley.
- Pressure cook on High for 20 minutes.
- Let the pressure naturally release for 10 minutes, then quick-release any remaining pressure.
- Stir in the peas and parsley before serving.

Tips
- Chuck roast cut into cubes gives the richest flavor.
- Pearl barley is ideal because it cooks faster than hulled barley.
