No-Churn Swirled Ice Cream

Ingredients
For the Vanilla Base

2 cups (480ml) heavy whipping cream, cold

1 can (14oz / 397g) sweetened condensed milk

2 tsp vanilla extract or vanilla bean paste

Pinch of salt
For the Chocolate Swirl

½ cup (85g) semi-sweet or dark chocolate chips

2 Tbsp (30ml) coconut oil or neutral oil (keeps the swirl soft when frozen)

Pinch of flaky sea salt (optional, but excellent)
Instructions
1. Make the chocolate swirl sauce
In a microwave-safe bowl or over a double boiler, gently melt the chocolate chips and oil together, stirring every 20 seconds until completely smooth. Stir in the sea salt if using, then set aside to cool to room temperature. It should be fluid but not hot.
2. Whip the base
In a large bowl, whip the cold heavy cream with an electric mixer until stiff peaks form — it should hold its shape firmly but still look smooth, not grainy.
3. Fold in the condensed milk
Gently fold the sweetened condensed milk, vanilla, and salt into the whipped cream with a spatula. Fold lightly until no white streaks of cream remain. Be gentle to keep the mixture airy.
4. Layer and swirl
Pour one-third of the vanilla base into a loaf pan or freezer-safe container. Drizzle one-third of the chocolate sauce over it in ribbons. Repeat with two more layers, ending with chocolate on top. Take a knife or skewer and swirl it through the mixture in figure-eight motions just 4–5 times. Don’t overmix — you want distinct ribbons.
5. Freeze
Cover tightly with plastic wrap or a lid and freeze for at least 6 hours, preferably overnight. The oil in the chocolate swirl keeps it from freezing rock-hard, so it will remain fudgy and scoopable.
If You Have an Ice Cream Maker (Classic Custard Version)
For a richer, scoop-shop texture, make a traditional cooked custard base.
Custard Base

Heat milk, cream, and half the sugar until steaming. Whisk yolks with remaining sugar, temper with hot milk, then cook to 170–175°F until it coats the back of a spoon. Strain, add vanilla and salt, chill thoroughly.

Churn in your ice cream maker according to the machine’s instructions.

Layer the churned ice cream and room-temperature chocolate swirl as described above, then freeze to firm up.
To serve: Let the container sit at room temperature for 5 minutes before scooping for the best texture. Enjoy in a cone, a bowl, or alongside warm brownies.
