Instructions
1. Preheat and prep
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
2. Mix dry ingredients
In a large bowl, whisk together the flour, granulated sugar, baking powder, salt, cinnamon, nutmeg, and ginger (if using).
3. Cut in the butter
Add the cold butter cubes to the flour mixture. Using a pastry cutter or your fingertips, work the butter into the flour until the mixture resembles coarse crumbs with some pea-sized pieces remaining.
4. Mix wet ingredients
In a small bowl or liquid measuring cup, whisk together the egg, milk, and vanilla extract.
5. Combine
Pour the wet ingredients into the dry mixture. Stir with a fork just until the dough starts to come together. Gently fold in the diced apple — don’t overmix; the dough will be lumpy and a bit sticky.
6. Shape the fritters
