Instructions
- Cook the gnocchi: Bring a large pot of salted water to a boil. Add the gnocchi and cook until they float to the surface, about 2β3 minutes. Reserve ΒΎ cup of the cooking water before draining.
- Toast the pepper: Melt the butter in a large skillet over medium heat. Add the freshly cracked black pepper and cook for 30β60 seconds until fragrant.
- Make the sauce: Add Β½ cup of the reserved cooking water to the skillet. Reduce the heat to low.
- Add the cheese: Gradually whisk in the Pecorino Romano (and Parmesan, if using), adding more cooking water as needed until the sauce becomes smooth and creamy.
- Combine: Add the cooked gnocchi and gently toss until every piece is coated in the silky cheese sauce.
- Serve immediately: Garnish with extra Pecorino Romano and freshly cracked black pepper.

- Freshly grated Pecorino Romano melts much better than pre-shredded cheese.
- Keep the heat low when adding the cheese to prevent the sauce from becoming grainy.
