Ingredients
BBQ Ribs
- 2 racks baby back ribs or St. Louis-style ribs (about 4–5 lbs / 1.8–2.3 kg)
- 2 tbsp yellow mustard (for coating)
- 1 cup BBQ sauce (plus extra for serving)
Southern Dry Rub
- 3 tbsp brown sugar
- 2 tbsp smoked paprika
- 1 tbsp chili powder
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 2 tsp salt
- 1 tsp black pepper
- 1 tsp cumin
- ½ tsp cayenne pepper (optional)
Instructions
1. Prepare the ribs
- Remove the thin membrane from the back of the ribs.
- Pat ribs dry.
- Rub mustard over both sides.
- Coat generously with BBQ dry rub.
- Cover and refrigerate for at least 2 hours (overnight gives the best flavor).
2. Slow cook the ribs
Oven Method:
- Preheat oven to 275°F (135°C).
- Wrap ribs tightly in foil.
- Place on a baking sheet and cook for 2½–3 hours until tender.
Smoker Method:
- Smoke at 225–250°F (107–121°C) for about 5–6 hours using hickory, oak, or apple wood.
3. Add BBQ glaze
- Remove ribs from foil.
- Brush generously with BBQ sauce.
- Increase heat to 400°F (200°C) or place on a grill.
- Cook for 10–15 minutes until caramelized and sticky.
4. Rest and slice
- Rest ribs for 10 minutes.
- Slice between the bones and serve.
