For the Dough
- 4 cups all-purpose flour

Walnut Filling
- 3 cups finely ground walnuts
- ¾ cup granulated sugar
- ½ cup warm milk
- 2 tbsp honey
- 1 tsp cinnamon
- ½ tsp vanilla extract
- ¼ tsp salt
- 1 egg white, lightly beaten
- 2 tbsp raisins (optional)
- 1 tbsp lemon zest (optional)
For Finishing
- 1 egg yolk mixed with 1 tbsp milk (for brushing)
- Powdered sugar for dusting (optional)
Instructions
1. Make the Dough
- Dissolve yeast and 1 teaspoon sugar in warm milk. Let stand for 5–10 minutes until foamy.
- In a large bowl, combine flour, remaining sugar, and salt.
- Add butter, egg yolks, vanilla, sour cream (if using), and yeast mixture.
- Knead until smooth and elastic, about 8–10 minutes.
- Cover and let rise for 1 hour, until slightly doubled.
2. Prepare the Walnut Filling
- Combine ground walnuts, sugar, cinnamon, salt, and lemon zest.
- Add warm milk and honey; mix into a thick paste.
- Stir in vanilla, raisins, and egg white.
- Cool slightly before spreading.
3. Assemble the Roll
- Roll the dough into a large rectangle (about ¼ inch thick).
- Spread the walnut filling evenly, leaving a small border.
- Roll tightly from the long side into a log.
- Place seam-side down on a lined baking sheet.
4. Bake
- Brush with egg yolk mixture.
- Let rest for 20–30 minutes.
- Bake at 350°F (175°C) for 35–45 minutes, until golden brown.
- Cool completely before slicing.
