Ingredients
- 4 large flour tortillas (or whole wheat tortillas)
- 1½ cups cooked black beans (or 1 can, drained and rinsed)
- 1 cup corn kernels (fresh, frozen, or canned)
- 1½ cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)
- ½ small onion, finely diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp chili powder
- 1 tsp ground cumin
- ½ tsp smoked paprika
- ½ tsp salt
- ¼ tsp black pepper
- Juice of ½ lime
- 2 tbsp chopped fresh cilantro (optional)
Instructions
- Prepare the filling.
- Heat olive oil in a skillet over medium heat.
- Add onion and bell pepper; cook for 3–4 minutes until softened.
- Add garlic and cook for 30 seconds.
- Season the mixture.
- Add black beans, corn, chili powder, cumin, smoked paprika, salt, and pepper.
- Cook for 3–5 minutes, lightly mashing some beans to help bind the filling.
- Stir in lime juice and cilantro.
- Assemble the quesadillas.
- Place a tortilla in a clean skillet over medium heat.
- Sprinkle cheese over half of the tortilla.
- Add the black bean and corn mixture.
- Add more cheese, then fold the tortilla over.
- Cook until crispy.
- Cook for 2–3 minutes per side until golden brown and the cheese is melted.
- Repeat with remaining tortillas.
- Slice and serve.
- Cut into wedges and serve warm.
