Ingredients
- 4 cups corn kernels (fresh, frozen, or canned and drained)
- 2 tbsp unsalted butter
- 2 cloves garlic, minced (optional)
- 1 cup heavy cream (or half-and-half)
- ½ cup whole milk
- 2 oz (60 g) cream cheese, softened
- 1 tbsp granulated sugar (optional, if corn isn’t very sweet)
- ½ tsp salt
- ¼ tsp black pepper
- 1 tbsp all-purpose flour (optional, for a thicker sauce)
- 2 tbsp grated Parmesan cheese (optional)
- Chopped fresh parsley or chives, for garnish
Instructions
- Melt the butter in a large skillet over medium heat.
- Add the garlic (if using) and cook for about 30 seconds until fragrant.
- Stir in the corn and cook for 3–4 minutes.
- If using flour, sprinkle it over the corn and stir for 1 minute.
- Pour in the heavy cream and milk, then add the cream cheese.
- Stir until the cream cheese has melted and the sauce is smooth.
- Add the sugar (if using), salt, pepper, and Parmesan cheese.
- Simmer gently for 5–8 minutes, stirring occasionally, until the mixture is thick and creamy.
- Taste and adjust the seasoning. Garnish with parsley or chives before serving.

- Southern Style: Add 2–3 slices of crumbled cooked bacon.
- Spicy: Stir in a diced jalapeño or a pinch of cayenne pepper.
