A classic, budget-friendly comfort meal made with ground beef, potatoes, and vegetables simmered in a rich tomato broth. It’s filling, flavorful, and perfect for feeding a family on a budget.

Ingredients
- 1 lb (450 g) lean ground beef
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 medium potatoes, peeled and diced
- 3 carrots, sliced
- 2 celery stalks, sliced (optional)
- 1 can (14.5 oz / 410 g) diced tomatoes, with juices
- 3 cups beef broth
- 2 tbsp tomato paste
- 1 tsp Worcestershire sauce
- 1 tsp Italian seasoning
- 1 tsp paprika
- 1 tsp salt (or to taste)
- ½ tsp black pepper
- 1 cup frozen peas (optional)
- 1 tbsp olive oil (if needed)
- Fresh parsley, chopped (for garnish)
Instructions
- Heat a large Dutch oven or soup pot over medium-high heat.
- Add the ground beef and cook until browned, breaking it into crumbles. Drain excess fat if necessary.
- Add the onion and cook for 4–5 minutes until softened. Stir in the garlic and cook for 30 seconds.
- Stir in the tomato paste and cook for 1 minute.
- Add the potatoes, carrots, celery, diced tomatoes, beef broth, Worcestershire sauce, Italian seasoning, paprika, salt, and pepper.
- Bring to a boil, then reduce the heat to low.
- Cover and simmer for 30–35 minutes, stirring occasionally, until the potatoes and carrots are tender.
- Stir in the frozen peas during the last 5 minutes of cooking.
- Taste and adjust the seasoning as needed.
- Garnish with fresh parsley and serve hot.
Slow Cooker Version
- Brown the ground beef with the onion and garlic in a skillet.
- Transfer to a slow cooker with the remaining ingredients except the peas.
- Cook on Low for 6–8 hours or High for 3–4 hours.
- Stir in the peas during the last 20 minutes of cooking.

- Bell peppers
- A pinch of red pepper flakes for heat
- 1 teaspoon smoked paprika for a deeper, smoky flavor
Storage
- Refrigerator: Up to 4 days in an airtight container.
