Ingredients
Chicken Stew
- 2 lbs (900 g) chicken thighs or drumsticks, bone-in preferred
- 2 tablespoons vegetable oil
- 2 large onions, sliced
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons tomato paste
- 1 can (14 oz / 400 g) crushed tomatoes
- 3 cups chicken stock
- 3 potatoes, peeled and cubed
- 2 carrots, sliced
- 1 bell pepper, chopped
- 2 bay leaves
South African Spice Blend
- 2 teaspoons curry powder
- 1 teaspoon paprika
- 1 teaspoon ground coriander
- Β½ teaspoon cumin
- Β½ teaspoon turmeric
- Β½ teaspoon cinnamon (optional)
- Salt and black pepper, to taste
Finishing Touches
- 1 tablespoon lemon juice or vinegar
- Fresh coriander or parsley
- Optional: chopped chili for heat
Instructions
1. Brown the Chicken
- Season chicken with salt and pepper.
- Heat oil in a large pot.
- Brown chicken pieces on all sides for 5β7 minutes.
- Remove and set aside.
2. Build the Flavor Base
- In the same pot, sautΓ© onions for 5 minutes until softened.
- Add garlic and ginger; cook for 30 seconds.
- Add curry powder, paprika, coriander, cumin, turmeric, and cinnamon.
- Stir for 1 minute until fragrant.
3. Simmer the Stew
- Add tomato paste and cook for 1 minute.
- Add crushed tomatoes and chicken stock.
- Return chicken to the pot.
- Add bay leaves.
- Cover and simmer for 30 minutes.
4. Add Vegetables
- Add potatoes, carrots, and bell pepper.
- Simmer uncovered for another 15β20 minutes until vegetables are tender and the sauce thickens.
- Add lemon juice and adjust seasoning.
5. Serve
Garnish with fresh herbs and serve hot.
