Instructions
1. Make the Meatballs
- In a large bowl, combine the ground meat, breadcrumbs, Parmesan, egg, garlic, parsley, Italian seasoning, salt, and pepper.
- Mix gently until just combined.
- Roll into small meatballs, about ¾ inch (2 cm) in diameter.
2. Brown the Meatballs (Optional)
- For extra flavor, lightly brown the meatballs in a skillet for 4–5 minutes.
- Alternatively, you can cook them directly in the soup.
3. Prepare the Soup
- Heat the olive oil in a large pot over medium heat.
- Sauté the onion, carrots, and celery for 5–7 minutes until softened.
- Add the garlic and cook for 30 seconds.
- Pour in the chicken broth and bring to a gentle boil.
4. Cook
- Add the meatballs and simmer for 10 minutes.
- Stir in the pasta and cook until tender (about 8–10 minutes, depending on the pasta).
- Add the spinach during the last 2 minutes of cooking, just until wilted.
5. Serve
