Ingredients
Chicken Marinade

Stew

- 1 red bell pepper, sliced

- 2 scallions, chopped
- 2 tomatoes, chopped
- 2 tablespoons tomato paste
- 2 cups chicken broth
- 1 tablespoon brown sugar
- 2 sprigs fresh thyme
- 2 bay leaves
- Salt and pepper, to taste
Instructions
1. Marinate the Chicken
- Clean and pat chicken dry.
- Combine chicken with browning sauce, soy sauce, Worcestershire sauce, lime juice, garlic, ginger, spices, thyme, salt, pepper, and Scotch bonnet.
- Cover and refrigerate for at least 2 hours, preferably overnight.
2. Brown the Chicken
- Heat oil in a heavy pot or Dutch oven over medium-high heat.
- Remove chicken from marinade (reserve marinade).
- Brown chicken pieces on all sides until deeply golden, about 5β7 minutes.
- Remove chicken and set aside.
3. Make the Stew
- In the same pot, sautΓ© onions, peppers, and scallions until softened.
- Add tomatoes and tomato paste; cook for 2 minutes.
- Add reserved marinade, broth, brown sugar, thyme, and bay leaves.
- Return chicken to the pot.
- Cover and simmer for 40β50 minutes until tender and the gravy is rich.
- Adjust seasoning and remove bay leaves before serving.
