🇩🇪 Rahmschnitzel (German Creamy Mushroom Schnitzel)
Rahmschnitzel is a classic German dish featuring tender breaded or unbreaded pork schnitzel topped with a rich, creamy mushroom sauce (Rahmsoße). The name comes from “Rahm”, meaning cream, and “Schnitzel”, meaning a thin cutlet. It’s a comforting restaurant-style meal often served with Spätzle, fries, or potato dumplings.

Schnitzel
- 4 pork loin cutlets (about 5 oz/140 g each) or veal cutlets
- Salt and black pepper, to taste
- ½ cup all-purpose flour
- 2 large eggs, beaten
- 1 cup breadcrumbs (preferably fine German breadcrumbs)
- 3–4 tablespoons butter or oil, for frying
Creamy Mushroom Sauce
- 2 tablespoons butter
- 8 oz (225 g) mushrooms, sliced
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon flour
- 1½ cups beef or chicken broth
- 1 cup heavy cream
- 1 teaspoon Dijon mustard (optional)
- ½ teaspoon paprika
- Salt and pepper, to taste
- 1 tablespoon fresh parsley, chopped
Instructions
1. Prepare the Schnitzel
- Place pork cutlets between plastic wrap and pound until about ¼ inch (6 mm) thick.
- Season both sides with salt and pepper.
- Set up three bowls:
- Flour
- Beaten eggs
- Breadcrumbs
- Coat each cutlet in flour, then egg, then breadcrumbs. Do not press the crumbs too firmly.
2. Cook the Schnitzel
- Heat butter or oil in a large skillet over medium-high heat.
- Fry schnitzels for 3–4 minutes per side until golden and crisp.
- Remove and keep warm.
3. Make the Rahm Sauce
- In the same pan, melt butter.
- Add mushrooms and cook until browned.
- Add onions and cook until softened.
- Stir in garlic and cook for 30 seconds.
- Sprinkle flour over the mixture and stir for 1 minute.
- Slowly add broth, stirring to prevent lumps.
- Add cream, mustard, paprika, salt, and pepper.
- Simmer for 5–10 minutes until creamy.
- Stir in parsley.
4. Serve
Place schnitzel on plates and spoon the creamy mushroom sauce over the top.
