Ingredients
- 2½ lbs (1.1 kg) starchy potatoes (Russet or Yukon Gold)
- 1½ cups (180 g) potato starch or all-purpose flour (adjust as needed)
- 2 large eggs
- 1 teaspoon salt
- ¼ teaspoon ground nutmeg
- 2 tablespoons butter (optional)
- ½ cup toasted bread cubes (optional, for filling)
- Fresh parsley, for garnish
Instructions
1. Cook the Potatoes
- Peel potatoes and cut into large chunks.
- Boil in salted water until fork-tender, about 20 minutes.
- Drain well and let steam dry for a few minutes.
- Mash or press through a potato ricer while still warm.
2. Make the Dough
- Spread mashed potatoes out slightly to cool.
- Add eggs, salt, nutmeg, and potato starch.
- Mix gently until a soft dough forms.
- Avoid overmixing, which can make dumplings gummy.
3. Shape the Dumplings
- Wet your hands and form the dough into balls about the size of a small tennis ball.
- If using bread cubes, place a few toasted cubes in the center before sealing the dumpling.
4. Cook the Dumplings
- Bring a large pot of salted water to a gentle simmer (do not boil rapidly).
- Carefully add dumplings.
- Cook for 15–20 minutes until they float and feel firm.
- Remove with a slotted spoon.
