Cake

- ยฝ cup (115 g) unsalted butter, softened
- 1 cup (200 g) granulated sugar
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
- ยฝ teaspoon almond extract (optional)
- ยพ cup (180 ml) whole milk
- 2 cups mixed fresh berries (such as strawberries, blueberries, raspberries, and blackberries)
- 1 tablespoon all-purpose flour (for tossing the berries)
Topping
- 1 tablespoon coarse sugar or granulated sugar
- Powdered sugar, for dusting
- Fresh mint leaves (optional)
Instructions
- Preheat the oven to 350ยฐF (175ยฐC). Grease and line a 9-inch (23 cm) round cake pan with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large bowl, beat the butter and sugar until light and fluffy, about 3โ4 minutes.
- Beat in the eggs one at a time, then add the vanilla and almond extract (if using).
- Add the dry ingredients in three additions, alternating with the milk, beginning and ending with the dry ingredients. Mix just until combined.
- Toss the berries with 1 tablespoon flour to help prevent them from sinking, then gently fold about half into the batter.
- Spread the batter evenly in the prepared pan and scatter the remaining berries over the top. Sprinkle with the coarse sugar.
- Bake for 40โ45 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
- Cool in the pan for 15โ20 minutes, then transfer to a wire rack to cool completely.
- Dust with powdered sugar and garnish with mint leaves before serving.
Optional Lemon Glaze
Whisk together:
- 1 cup powdered sugar
- 2โ3 tablespoons fresh lemon juice
- ยฝ teaspoon lemon zest
