π Ingredients
- 2 liters full-fat milk (about 8 cups)
- Β½ cup sugar (adjust to taste)
- Β½ teaspoon cardamom powder
- 10β12 saffron strands
- 2 tablespoons warm milk (for soaking saffron)
- ΒΌ cup chopped almonds
- ΒΌ cup chopped pistachios
- 1 tablespoon rose water (optional)
- 1 teaspoon kewra water (optional)

1. Prepare the Milk
- Pour milk into a heavy-bottomed wide pan.
- Bring it to a gentle boil over medium heat.
- Reduce heat to low and simmer uncovered.
2. Thicken the Rabri
- Stir occasionally to prevent burning.
- As a layer of cream forms on top, gently collect it and push it toward the side of the pan.
- Continue simmering until the milk reduces to about one-third of its original quantity.
- Scrape the cream layers back into the milk for a rich texture.
3. Flavor the Rabri
- Add sugar and stir until dissolved.
- Add soaked saffron, cardamom powder, and rose/kewra water if using.
- Simmer for another 5β10 minutes.
- Mix in chopped nuts.
4. Chill & Serve
- Transfer rabri to a serving bowl.
- Garnish with pistachios, almonds, and saffron strands.
- Refrigerate for at least 2 hours.
- Serve chilled.
