🍉🥒 Watermelon Gazpacho
A refreshing twist on the classic Spanish cold soup — this Watermelon Gazpacho is sweet, tangy, and incredibly cooling. Juicy watermelon blends with crisp cucumber, tomatoes, herbs, and a touch of lime for the perfect summer appetizer or light meal.
Ingredients
- 6 cups seedless watermelon, cubed and chilled
- 1 large cucumber, peeled and chopped
- 2 medium ripe tomatoes, chopped
- ½ red bell pepper, chopped
- ¼ red onion, chopped
- 1 small jalapeño, seeded (optional)
- ¼ cup fresh basil or cilantro leaves
- 2 tbsp extra virgin olive oil
- 3 tbsp fresh lime juice (or lemon juice)
- 1 tbsp red wine vinegar
- 1 clove garlic (optional)
- ½ tsp salt (adjust to taste)
- ¼ tsp black pepper
Optional Garnishes
- Crumbled feta cheese
- Diced cucumber
- Fresh mint leaves
- Basil leaves
- Watermelon cubes
- A drizzle of olive oil
- Chili flakes
Instructions
1. Blend the gazpacho
- Add watermelon, cucumber, tomatoes, bell pepper, onion, jalapeño, herbs, garlic, lime juice, vinegar, olive oil, salt, and pepper to a blender.
- Blend until smooth and creamy.
2. Chill
- Taste and adjust seasoning.
- Cover and refrigerate for at least 1–2 hours to allow flavors to blend.
3. Serve
- Pour into chilled bowls or glasses.
- Top with cucumber, feta, herbs, or a few watermelon cubes.
- Serve cold.
