Ingredients
For the Base

Potatoes: 1 kg (2.2 lbs) floury potatoes (Maris Piper or Russets), peeled and diced into 2cm (¾ inch) cubes

Chicken: 500g (1.1 lbs) boneless, skinless thighs or breasts, cut into bite-sized chunks

Olive oil: 2 tbsp

Salt: 1½ tsp

Black pepper: 1 tsp

Garlic powder: 1 tsp

Smoked paprika: 1 tsp

Onion powder: 1 tsp
The Creamy Binder

Sour cream: 180ml (¾ cup)

Double cream: 120ml (½ cup)

Cream cheese: 100g (3.5 oz), softened

Garlic: 2 cloves, minced
The Cheesy, Crispy Top

Mature cheddar: 200g (2 cups), freshly grated

Mozzarella: 100g (1 cup), grated

Bacon: 6 rashers, cooked crisp and crumbled (half inside, half on top)

Spring onions: 3-4, sliced (half inside, half to garnish)
Method
Step 1: Choose Your Potato Method
Option A — Parboiled (Faster, Simpler)

Place diced potatoes in a large pot of cold, heavily salted water. Bring to a boil and cook for 5-7 minutes. They should be softening on the outside but still firm in the centre.

Drain thoroughly and let them steam-dry in the colander for 2-3 minutes.
Option B — Lightly Roasted (Crispier, Deeper Flavour)

Parboil as above, then drain and steam-dry.

Toss with 1 tbsp olive oil, a pinch of salt, and pepper. Spread on a baking tray and roast at 220°C / 425°F for 15-20 minutes until the edges are turning golden and crisp.

Remove from the oven and let cool for 5 minutes. Reduce oven temperature to 200°C / 400°F for the casserole.
Step 2: Preheat and Prep
Preheat the oven to 200°C / 400°F / Gas Mark 6. Grease a 23x33cm (9×13 inch) baking dish.
Step 3: Season the Chicken and Potatoes
In a large bowl, toss the prepared potatoes (parboiled or lightly roasted) and raw chicken chunks with 2 tbsp olive oil, salt, pepper, garlic powder, smoked paprika, and onion powder.
Step 4: Make the Creamy Binder
In a separate bowl, whisk together the sour cream, double cream, softened cream cheese, and minced garlic until smooth. Stir in half the crumbled bacon and half the spring onions. Season lightly with salt and pepper.
Step 5: Assemble the Casserole
Spread the seasoned potatoes and chicken in the greased baking dish. Pour the creamy mixture over the top, spreading it evenly so it seeps down between the pieces.
Step 6: Bake
If using Parboiled Potatoes:

Bake uncovered for 35-40 minutes, until the chicken is cooked through and the edges are bubbling.

Top with both cheeses and the remaining bacon. Return to the oven for 15 minutes until melted and golden.
If using Lightly Roasted Potatoes:

Bake uncovered for 25-30 minutes, until the chicken is cooked through.

Top with both cheeses and the remaining bacon. Return to the oven for 10-15 minutes until melted and golden.
Step 7: The Crispy Finish
Switch the grill to high and grill the casserole for 2-3 minutes until the cheese blisters and turns deep golden in spots. Watch closely.
Step 8: Rest and Serve
Let the casserole rest for 5-10 minutes (this helps the creamy binder set slightly). Scatter with the remaining spring onions and serve.
