Here’s a fragrant, creamy Slow Cooker Coconut Chicken Curry that’s beautifully spiced, mildly rich, and incredibly easy. It’s perfect for a hands-off weeknight meal that tastes like it simmered all day.

-
Serves: 4-6
Ingredients
For the Curry Base
-
Chicken: 800g (1.75 lbs) boneless, skinless chicken thighs, halved if large (thighs stay much juicier than breast)
-
Onion: 1 large, finely diced
-
Garlic: 4 cloves, minced
-
Ginger: 1 tbsp, freshly grated

2 tsp garam masala

1½ tsp ground cumin
-
1½ tsp ground coriander
-
1 tsp turmeric
-
½ tsp chilli powder (or more to taste)
-
½ tsp ground cinnamon (optional, for warmth)
-
-
Tomato paste: 2 tbsp
-
Tinned chopped tomatoes: 1 x 400g (14 oz) can
-
Full-fat coconut milk: 1 x 400ml (14 oz) can — shake well before opening
-
Salt: 1 tsp
-
Black pepper: ½ tsp
For the Finish
-
Lime juice: 1-2 tbsp, to brighten
-
Brown sugar or honey: 1 tsp (optional, to balance acidity)
-
Fresh coriander: a handful, roughly chopped
-
Green chilli: 1, thinly sliced (optional, for heat)
-
Toasted flaked almonds or cashews: for garnish
Optional Add-Ins
-
Vegetables: 1 red pepper sliced, a handful of green beans, or 200g cubed butternut squash
-
Spinach: 2 large handfuls, stirred in at the end until wilted
Method
1. Bloom the Spices (Key Step for Depth)
Heat 1 tbsp oil in a pan or in your slow cooker if it has a sauté function. Over medium heat, cook the onion for 5 minutes until softened. Add the garlic and ginger, cook 1 minute. Add all the dry spices and tomato paste. Stir constantly for 1 minute until intensely fragrant and slightly darkened — this awakens the spices and removes any raw taste.
2. Transfer to Slow Cooker
Scrape the onion-spice mixture into the slow cooker. Add the chicken thighs, tinned tomatoes, and salt. Pour in half the coconut milk, reserving the rest for later (this prevents it from splitting or losing its silky texture during the long cook).
3. Slow Cook
Stir everything together, cover, and cook:
-
LOW: 4-5 hours
-
HIGH: 2-3 hours
The curry is ready when the chicken is tender and cooked through. It will look slightly separated — this is normal.
4. Finish the Curry
Switch the slow cooker to warm. Stir in the reserved coconut milk, lime juice, and sugar (if using). This brings the creaminess back to life and freshens all the flavours. Taste and adjust — more salt, lime, or chilli as needed.
5. Add Vegetables (If Using)
For firmer veg like peppers or green beans, add them for the last 30-45 minutes of cooking so they retain some bite. For spinach, stir through at the very end until just wilted.
6. Serve
Ladle into bowls over steamed basmati rice or with warm naan. Scatter generously with fresh coriander, sliced green chilli, and toasted nuts.
Serving Suggestions
-
Fluffy basmati rice or coconut rice
-
Garlic naan or flaky parathas
-
Quick pickled red onions (thinly slice a red onion, soak in lime juice and a pinch of salt for 10 minutes)
-
Mango chutney on the side
Tips
-
Chicken thighs are best. If using breast, reduce the cooking time to 3-4 hours on LOW and check early — they can dry out.
-
Marinate for even more flavour: Toss the chicken with half the spices, salt, and 2 tbsp yogurt for an hour (or overnight) before browning.
-
Make it veggie: Swap the chicken for chickpeas (2 cans, drained) and cubed sweet potato. Reduce cooking time slightly.
-
Freezes perfectly: Cool and freeze for up to 3 months. The flavours deepen after a day in the fridge.
