This is a one-pan stunner. The chicken is seared until golden, then bathed in a sticky glaze made from fresh pineapple juice, honey, soy sauce, and garlic. Ingredients (Serves 4)
For the Chicken:

2 lbs (900g) boneless, skinless chicken thighs (juicier) or breasts, cut into large bite-sized chunks

1 cup fresh pineapple juice (from the pineapple below, or canned)

2 tablespoons rice vinegar or apple cider vinegar

1 tablespoon ketchup or tomato paste

4 garlic cloves, minced

1 tablespoon cornstarch mixed with 2 tablespoons cold water (slurry)
For the Pineapple & Veggies:

2 cups fresh pineapple chunks (about ½ a ripe pineapple, or canned chunks, drained)

1 large red bell pepper, cut into 1-inch chunks

1 medium red onion, cut into wedges
For Serving:

Steamed jasmine rice or coconut rice

Instructions

Prep the Pineapple Boat (Optional but Beautiful): If you want to serve the dish in a pineapple, take a whole ripe pineapple and slice it in half lengthwise, right through the crown leaves. Use a sharp knife to cut around the inside edge, then score the flesh into chunks and scoop them out. Reserve the hollowed-out shell for serving, and use the fresh chunks for the recipe.

Season and Sear the Chicken: Pat the chicken pieces completely dry. Season with salt and pepper. Heat the oil in a large skillet or wok over medium-high heat. Add the chicken in a single layer and sear for 3-4 minutes per side until deeply golden. Remove the chicken from the pan and set aside. The chicken doesn’t need to be fully cooked through at this stage.

Sauté the Aromatics & Veggies: In the same pan, reduce the heat to medium. Add the red onion wedges and bell pepper chunks. Stir-fry for 2-3 minutes until they begin to soften and char at the edges. Add the garlic and ginger, stirring for 30 seconds until fragrant.

Build the Glaze: Pour in the pineapple juice, soy sauce, honey, rice vinegar, and ketchup. Whisk together and bring to a rolling simmer. Let the sauce bubble and reduce for 3-4 minutes until slightly thickened.

Thicken to a Glossy Glaze: Give the cornstarch slurry a quick stir and drizzle it into the simmering sauce while whisking. The sauce will thicken almost immediately into a glossy, sticky glaze.
