Lazy Honey Garlic Chicken
This recipe uses a single baking dish. There’s no browning, no stovetop searing, and no basting. The honey-garlic sauce is simply whisked together, poured over the chicken, and baked until it transforms into a thick, glossy glaze. Bone-in, skin-on chicken thighs are ideal because they stay juicy and the skin crisps under the broiler.
Ingredients (Serves 4-6)
-
6 bone-in, skin-on chicken thighs (about 2.5 lbs / 1.1 kg), or a mix of thighs and drumsticks
-
1 teaspoon sea salt
-
½ teaspoon freshly ground black pepper
-
½ cup honey
-
⅓ cup low-sodium soy sauce
-
2 tablespoons ketchup or tomato paste (ketchup for sweetness, tomato paste for depth)
-
6 garlic cloves, roughly chopped—no need to mince finely
-
1 tablespoon apple cider vinegar or rice vinegar
-
1 tablespoon olive oil
-
½ teaspoon dried chili flakes (optional, for the laziest hint of heat)
-
Sliced green onions and toasted sesame seeds, for garnish
-
Steamed rice, for serving
Instructions
-
Preheat the Oven: Preheat your oven to 400°F (200°C). Pat the chicken thighs completely dry with paper towels. This is the only “effort” step, and it matters for the skin.
-
Season and Arrange: Season the chicken on both sides with the salt and pepper. Place the thighs skin-side down in a single layer in a 9×13-inch baking dish. They should be snug but not completely crowded.
-
Mix the Lazy Sauce: In a small bowl or a measuring cup, whisk together the honey, soy sauce, ketchup, roughly chopped garlic, vinegar, olive oil, and chili flakes if using. No need to dissolve anything perfectly; the oven will meld it all together. Pour the sauce evenly over the chicken. It will look thin and abundant—that’s exactly right.
-
Bake and Let the Magic Happen: Place the dish in the oven and bake, uncovered, for 20 minutes.
-
Flip and Finish: Remove the dish from the oven. Using tongs, flip each piece of chicken so it’s now skin-side up. The sauce will be watery and bubbling at this stage. Return the dish to the oven and bake for another 20-25 minutes, until the chicken is cooked through (internal temperature of 175°F / 79°C in the thickest part) and the sauce has visibly thickened and turned sticky.
-
Crisp the Skin (The Final Lazy Trick): Switch the oven to broil on high. Move the rack to the top third. Broil the chicken for 2-3 minutes, watching it like a hawk, until the skin blisters, crisps, and turns a beautiful deep mahogany with charred spots.
-
Rest and Serve: Remove the dish from the oven and let the chicken rest in the pan for 5 minutes. The sauce will continue to thicken into a syrup as it cools slightly. Spoon the glossy pan sauce over the chicken, scatter with green onions and sesame seeds, and serve immediately over steamed rice.
Serving Suggestion: For the laziest complete meal, toss some broccoli florets or baby potatoes into the dish alongside the chicken for the last 20 minutes of baking. They’ll roast in the sauce and soak up the honey-garlic goodness.
