Steak with Garlic Cream Sauce
The key to this dish is a perfectly seared steak and a velvety, flavor-packed sauce made right in the same pan, capturing all the delicious browned bits from the meat.
Ingredients
For the Steak:

2 boneless steaks (ribeye, New York strip, or filet mignon), about 1.5 inches thick (approx. 8 oz / 225g each)

1 tablespoon high-smoke-point oil (like avocado or canola oil)

Sea salt and freshly cracked black pepper, generously applied
For the Garlic Cream Sauce:

2 tablespoons unsalted butter

6-8 large garlic cloves, finely minced (don’t be shy!)

½ cup low-sodium beef broth (or chicken broth)

1 cup heavy cream (or half-and-half for a lighter version)

¼ cup freshly grated Parmesan cheese

1 teaspoon Dijon mustard (adds a subtle tang that balances the richness)

Salt and freshly cracked black pepper, to taste

Optional but recommended: ¼ teaspoon fresh thyme leaves or 1 teaspoon fresh chopped parsley

Prepare the Steaks: Remove the steaks from the fridge 30-45 minutes before cooking. Pat them completely dry with paper towels—this is the single most important step for a glorious crust. Season aggressively on all sides with salt and pepper.

Sear the Steaks: Place a heavy-bottomed skillet, preferably cast iron, over high heat. Add the oil and let it shimmer and just barely smoke. Carefully lay the steaks in the pan away from you. They should sizzle loudly. Sear undisturbed for 4-5 minutes on the first side until a deep, brown crust forms. Flip and cook for another 3-5 minutes for medium-rare (internal temp of 130-135°F / 54-57°C). Adjust time for thickness and your desired doneness. In the last minute, you can add 1 tablespoon of butter, tilt the pan, and spoon the foaming butter over the steaks for extra richness.

Rest the Steaks: Transfer the steaks to a cutting board or warm plate, tent loosely with foil, and let them rest while you make the sauce. Do not wipe out the skillet. Those browned bits are flavor gold.

Build the Sauce: Lower the heat to medium. In the same skillet, melt the 2 tablespoons of butter. Add the minced garlic and sauté for just 30-60 seconds until incredibly fragrant, stirring constantly so it doesn’t burn.

Deglaze and Simmer: Pour in the beef broth, scraping the bottom of the pan with a wooden spoon to release all the stuck-on fond. Let it bubble and reduce by about half, 2-3 minutes.

Make it Creamy: Whisk in the heavy cream, Dijon mustard, and any optional fresh herbs (like thyme). Bring to a gentle simmer and let it cook, whisking occasionally, for 3-5 minutes until the sauce thickens enough to coat the back of a spoon.

Finish the Sauce: Remove the pan from the heat. Stir in the grated Parmesan cheese until completely melted and smooth. Taste the sauce and season with salt and pepper as needed.

Serve: Slice the rested steaks against the grain. The plate will have collected some meaty juices—be sure to pour these back into the cream sauce or directly over the sliced steak. Spoon the warm garlic cream sauce generously over the steak. Serve immediately with roasted asparagus, mashed potatoes, or crusty bread.
