Gorgeous Greek Lemon-Herb Chicken
This recipe focuses on chicken thighs for maximum juiciness, but you can use a mix of bone-in, skin-on pieces or even a spatchcocked whole chicken—just adjust the cooking time.
Ingredients
For the Chicken & Marinade:

6-8 bone-in, skin-on chicken thighs (or 3 lbs / 1.4kg mixed pieces)

¼ cup extra-virgin olive oil

Zest and juice of 2 large lemons (about 1/3 cup juice)

6 garlic cloves, minced

1 tablespoon dried oregano (Greek oregano is best)

1 teaspoon dried thyme or rosemary

1 teaspoon sea salt

1 teaspoon freshly ground black pepper

½ teaspoon red pepper flakes (optional, for a gentle warmth)

1 cup plain Greek yogurt (full-fat for best flavor and texture)

Make the Marinade: In a large bowl, whisk together the olive oil, lemon zest, lemon juice, minced garlic, oregano, thyme (or rosemary), salt, black pepper, and red pepper flakes. Whisk in the Greek yogurt until you have a smooth, creamy sauce.

Marinate the Chicken: Pat the chicken pieces completely dry with paper towels. This is crucial for crispy skin. Add the chicken to the bowl with the marinade and use your hands to massage the mixture all over, getting some under the skin as well. Cover the bowl and refrigerate for at least 2 hours, but ideally 4-8 hours. The yogurt and lemon juice work together to tenderize the meat beautifully. Don’t marinate for more than 12 hours, or the lemon juice can start to break down the texture too much.

Bring to Room Temperature: 30 minutes before you plan to cook, remove the chicken from the refrigerator. This helps it cook more evenly.

The internal temperature of the thickest part of the thigh should reach 165°F (74°C), and the skin should be a deep, burnished golden brown with some charred spots. If the skin isn’t as crispy as you’d like by the time the chicken is cooked, pop it under the broiler for the final 2-3 minutes. Watch it constantly to prevent burning.
