Roasted Cabbage Steaks

1 large head green cabbage (or Savoy)

3-4 tbsp olive oil

1 tsp kosher salt

½ tsp freshly ground black pepper

1 tsp garlic powder

1 tsp smoked paprika (or sweet paprika)

½ tsp red pepper flakes (optional, for gentle heat)

Method
1. Preheat and Prep

Preheat oven to 200°C (400°F) . Line a large rimmed baking sheet with parchment paper.

Remove any loose, damaged outer leaves from the cabbage. Rinse and pat dry.
2. Slice into Steaks

Stand the cabbage upright on its stem end. Using a large, sharp chef’s knife, slice straight down from top to bottom into 2-2.5 cm (¾ to 1-inch) thick slabs. You’ll get 4-6 steaks from one large cabbage.

The outer pieces may fall apart slightly — that’s okay. Keep them; the loose edges get extra crispy and are the best part. Keep the core intact on each steak, as it holds the slice together.
3. Season

Place the cabbage steaks on the prepared baking sheet in a single layer — no overlapping.

Brush or drizzle both sides generously with olive oil. Sprinkle with salt, pepper, garlic powder, smoked paprika, and red pepper flakes.

Gently massage the seasoning into all the nooks and crannies with your fingers.
4. Roast

Roast on the middle rack for 25 minutes.

Using a large, thin spatula, carefully flip each steak. The bottoms should be deeply golden and caramelized.

If using Parmesan, sprinkle it on now.

Return to the oven and roast another 15-20 minutes, until the edges are charred and crispy, the core is tender when pierced with a knife tip, and the leaves are golden brown.
5. Finish and Serve

Transfer to a serving platter. Squeeze fresh lemon juice generously over the hot steaks. Finish with a drizzle of good olive oil and a pinch of flaky salt.

These are excellent hot, warm, or at room temperature.
