Garlic Butter Steak Bites
Serves 4 as a main, 6-8 as an appetizer
Ingredients

680g (1.5 lbs) sirloin steak (ribeye, strip, or tenderloin also work), cut into 2.5 cm / 1-inch cubes

1 tbsp high-heat oil (avocado, grapeseed, or vegetable)

3 tbsp unsalted butter, divided

6 large cloves garlic, minced (about 2 tbsp)

1 tbsp fresh rosemary or thyme, finely chopped (or 1 tsp dried)

½ tsp red pepper flakes (optional, for gentle heat)

1 tbsp fresh parsley, chopped

Flaky sea salt (Maldon) and freshly cracked black pepper

Lemon wedges, for serving (optional, but brightens everything)
Method
1. Prep the Steak

Pat the steak cubes extremely dry with paper towels — moisture is the enemy of a good sear.

Season generously with salt and pepper just before cooking. Let them come to room temperature while the pan heats.
2. Get the Pan Screaming Hot

Heat a large cast-iron or heavy stainless steel skillet over high heat until it just begins to smoke. Add the oil and swirl to coat.
3. Sear in Batches (Don’t Crowd the Pan)

Place the steak bites in a single layer with space between each piece. Do not move them for 1½-2 minutes. They should develop a deep, dark crust.

Flip and sear another 1-1½ minutes for medium-rare. If you like them more done, add 30 seconds per side. Work in batches so the pan stays hot — overcrowding creates steam and grey meat.

Transfer seared bites to a plate. Tent loosely with foil.
4. Make the Garlic Butter

Reduce the heat to medium-low. Add 1 tablespoon butter, the minced garlic, rosemary/thyme, and red pepper flakes. Stir constantly for 30-45 seconds until fragrant. Do not let the garlic brown or it turns bitter.

Add the remaining 2 tablespoons butter and swirl until melted and foamy.
5. Toss and Serve

Return the steak bites (and any resting juices) to the pan. Toss vigorously for 30-60 seconds to coat every piece in the garlic butter and warm through.

Remove from heat. Sprinkle with parsley and flaky sea salt. Squeeze a little lemon juice over the top if using.

Tips for Perfect Steak Bites

Cut evenly: Uniform 2.5 cm cubes cook at the same rate. Trim any long silver skin or gristle.

Pat dry: Water on the surface steams the meat. Bone-dry beef = deep brown crust.

Smoking hot pan: High heat is non-negotiable. The sear should happen fast so the inside stays tender.

Don’t crowd: Leave at least 1 cm between pieces. Cook in 2-3 batches if needed, wiping the pan between if any burnt bits accumulate.

Fresh garlic over jarred: The flavor difference is massive in such a simple dish.
